6 Easy & Healthy Vegan Foods
It’s really easy for the contents of your menu to become a bit boring and predictable, but with a little inspiration you can bring the fun back to your table. And, whether it’s for you or for your guests, if a little creativity you can take control of your meals and you can make sure they’re healthy too. Here are six easy and healthy foods vegans can eat for you to try.
1. Super smoothies
Smoothies are a great way of packing a lunchbox with goodness. Whatever fruit you decide to go for – bananas, berries, apples or pineapples – you can throw in a handful of spinach for an extra health boost. Spinach is packed with nutrients and the taste (if not liked) is easily masked by flavoursome fruits, too. Once whizzed up you can pour into a thermos or other temperature-controlled container to keep it cool and look forward to lunchtime.
2. Quinoa salads
Quinoa is a superfood that’s packed full of protein and a whole host of other nutrients. It’s delicious too. Cook it the night before and add in a variety of your favourite veg, herbs and maybe even a pomegranate seed or two for a burst of flavour in the middle of the day.
3. Lettuce wraps
A crispy lettuce wrap is the perfect alternative to a boring old sandwich. Iceberg lettuce is particularly good as it holds its shape and remains crispy. Pack it out with your favourite fillings and secure with a cocktail stick. When you’re ready to eat just remove the stick and chomp away.
4. Tasty tacos
Like lettuce wraps, tacos are a cracking sandwich alternative. Fill a corn tortilla with beans, onions, peppers and spices for an authentic Mexican bite. Add in some smashed avocado for that guacamole taste too. Why not try a vegan version of tacos?

5. Cauliflower rice bowls
Everyone knows how good cauliflower can be as a rice substitute in curries and other lovely dinner dishes, but what about lunch? Simply mix blitzed cauliflower with soya, tofu, a selection of veg, herbs and spices for a hearty lunch. Toast your cauliflower until it goes brown on the edges to add a nutty taste.
6. Dairy free yoghurt pots
Last up in our list of healthy lunch box ideas is a creamy dairy free yoghurt pot. It’s the ideal indulgent – but still healthy – treat when prepared the right way. Top with fruit compote to add a little natural sweetness. Sprinkle in some toasted oats, nuts or seeds for a bit of crunch and to get an extra hit of fibre into lunch.
